Today I work from home and I don’t want to spend too much time cooking because I have a lot to do. When I felt hungry, I opened the fridge and took out some tomatoes and parsley. At the same time, I started boiling some water.
I washed the tomatoes and parsley and cut them. Once the water was boiling, I put in the whole-grain pasta and cooked them al dente.
Once cooked, I put the tomatoes and parsley on the drained pasta and add 4-5 walnut halves.
The pasta are hot but the tomatoes and parsley are cold. This recipe is really perfect for hot summer days and on the same time it is a healthy, easy, cheap, fulfilling and delicious lunch.
I eat once or twice a week pasta and I try to eat pasta on my training days.
